Smokehouse Cafe.
"We're doing it on faith," is all the Dene entrepreneur says, returning a smile to partner Barry Eaton as they continue cleaning windows and walls.
This has been a labour of love for the two of them. Ever since they made the decision to open a business, both have spent countless hours readying themselves for the burdens entrepreneurship would place upon their shoulders.
"We wanted to do something that isnt being done in town," says Eaton about their proposed menu. "People from all over the world want to see what the Dene in this area are doing, and they want to eat the same types of food."
The restaurant will provide tourists and local customers alike traditional country foods such as caribou, and whitefish. It will offer a buffet-style eatery providing both lunch and supper. Between 2:30 and 4:30, tea and bannock will be available while local storytellers offer a glimpse into Dene traditions, legends and culture.
"Eventually, well offer a full menu, but for now, well feature country foods," explains Eaton, a former restaurant manager.
During the days leading up to the grand opening in early July, the pair will be testing menus, systems and techniques, hoping everything works out. So far, everything has. It will be when they see their customers smile that theyll know their leap of faith will be rewarded.
